Our mutton has been hung for 14 days to ensure it is flavoursome and tender. The meat comes from ewes which are at least 2 years old. Our ewes will have reared many lambs and have come to the end of their reproductive life. It is a forgotten meat and is quietly making a comeback. Excellent for curries.
